Twinings Tea: Darjeeling
Serves 6.
Ingredients
- 8oz diced sole
- 8oz diced salmon
- 8oz diced snapper
- 8oz diced swordfish
- 1 1/2 papaya peeled and diced
- 1 whole red pepper diced
- salt and pepper to taste
- 1 pinch of cayenne
- 2 whole deseeded and peeled diced tomatoes
- 4 whole chopped shallots
- 1 bunch shallots thinly sliced
- 1 green pepper diced
- the juice of 8 whole lemons
- 1oz shredded coconut
- 4oz salad oil
- 1tsp Darjeeling in a cloth
Method
- Combine all the above ingredients into one bowl and let marinate for 24 hours.
- Dress the salad into a half coconut shell and garnish with slices of lime and tea leaves.
