With Soothe tea–infused brown basmati rice as the base, this power bowl makes a comforting and nutritious meal. Serve hot or cold.

HOW TO
- Pour 3 2/3 cups (900 mL) freshly boiled water over tea bags; let steep for 4 to 5 minutes. Remove tea bags.
- In saucepan, combine 3 cups (750 mL) brewed tea, rice and 1/2 tsp (2 mL) salt; bring to boil. (Let remaining tea cool.) Reduce heat to low; cover and cook for 25 to 30 minutes. Uncover; cook for 5 to 10 minutes or until rice is tender and liquid is absorbed. Remove from heat; cover and let stand for 10 minutes. Fluff with fork before serving.
- Meanwhile, whisk together tahini paste, cooled tea, lemon juice, garlic, cayenne and remaining salt until smooth.
- Divide rice among 4 bowls. Top with sweet potatoes, chickpeas, kale and avocado. Drizzle with tahini sauce; sprinkle with pepper.
Tip: Add 1 chopped clove garlic or 2 tsp (10 mL) minced fresh gingerroot to tahini sauce if desired.
